Its name comes from the Nordic 'dilla,' meaning 'to lull,' because of its calming effects. Dill is seen in the sour cream- & yoghurt-based sauces of Scandinavia as well as the borscht of Russia. Try making a simple sauce of plain yoghurt, dill & sea salt (all to personal taste) as a complement to poached or smoked salmon
