Origin: India. Found in ancient Egypt, cumin may well be the original cultivated seed-spice. Cumin now marks the foods of North Africa, western Asia, India & Mexico. It's distinctive aroma comes from an unusual chemical (cuminaldehyde) that is related to the essence of bitter almond (benzaldehyde). It also has fresh & pine notes.
